The Spring Citrus Salad I Can't Stop Making

I love salads. I’m a big fan of a big salad, and experimenting with different salad combinations is one of my favorite ways to mix things up and make sure I’m getting some veggies and fruits in each day. I have been dreaming up a salad that felt fresh and spring-like, and I love how this one turned out - I truly can’t stop making it. It’s super easy and fast to throw together and packs so much flavor into each and every bite.

On a personal note - I can’t stand when recipe posts go on and on forever before they get to the recipe, so without further ado-

Ingredients

Spring Mix - I like a mixture of spinach, red leaf and green leaf lettuce

1 Shallot - rings sliced extremely thin. These add a nice zip to the salad

Pistachios - adds a nutty and delicious crunch

Grapefruit Slices - you can use any citrus you want, but I was craving grapefruit and it adds a nice fresh brightness to the salad

Goat Cheese - creamy goat cheese balances out the nuttiness of the pistachios and the zip of the shallots and grapefruit

Minced parsley - I’m telling y’all now. You need to start adding herbs to your salads. I had a life-changing salad at Pecan Square Cafe in the fall and the it was loaded with fresh herbs.

Vinaigrette - 1 tsp. mustard, 1 tbsp. Olive Oil, 1 tsp. red wine vinegar, 1 tsp. apple cider vinegar, pepper, 1 tsp. honey.

Toss all the salad ingredients together and mix the vinaigrette and drizzle it over the top. Enjoy.
